You know about my love for Mexican food. I could eat it almost every day.

Now it's time to welcome a new addition to this list. These Vegan Creme Cheese Taquitos are an absolute flavor bomb. Nothing less than super delicious.

First step is making the filling: combine black beans, vegan cream cheese, garlic, and nutritional yeast in a small bowl.
Season with salt and pepper, mash with a fork or potato masher until you have a smooth mix.
Next comes preparing the actual taquitos: add about 2 Tbs of the filling into the tortilla and roll tight.
You can brush these with a bit of oil. Bake the rolls on a baking sheet prepared with parchment paper for around 15 minutes at 390F and you are done.

For the filling:

- 1 15 oz can black beans
- ½ cup nutritional yeast
- 6 cloves garlic pressed

I always check out your recipe so I can see what the vegan substitute ingredient is. I see the nutritional yeast used all the time. what does that bring to this dish (says the non-vegan who wants to know)?

I somehow missed this post Florian! Mmmm, I bet these are super duper cheesy with all that yummy cream cheese and nutritional yeast and then to pair it with black beans, sounds absolutely delicious! All rolled into a crispy tortilla, yum yum! I can imagine all the amazing flavors you could add to this too and any veggies and just go crazy with all the ideas. Yum! My taquitos are in the oven now. I used some leftover canned red beans I had and threw everything in the food processor. The filling tastes amazing! Im always looking for ways to enhance vegan cream cheese. Thank you!

Can you freeze these? If so, before you cook? Or after?
Hi Shea! I haven't tried this before but I think it might work. I would say you can freeze them after baking. Just make sure to let them cool down a bit before going to the freezer.
