How to Make Falafel with Turmeric

What makes this easy falafel recipe outstanding? First, even though it's just a baked falafel and not fried, its taste is not dry but moist and fluffy without using much oil.
This nearly oil free recipe just needs one teaspoon olive oil. It is used to activate the healing and health benefits of turmeric. Just like a carrot salad, for example, you need a small amount of oil to activate the vitamins which is not possibly without.
Still you don't need more oil than 1 teaspoon for about 15 falafel balls.
How to make falafel that is so moist and fluffy nearly without using any oil?
The secret is the chickpea brine which is the liquid in your chickpea can. I use 2 Tbs of this liquid here to get my falafel soft and not dry.
All you do is to activate the turmeric, combine the oil and turmeric together and whisk then put the ingredients in a food processor or blender. Blend until smooth and bake for 20 minutes, ready!

Ingredients
- 1 14 oz (400g) can chickpeas
- 2 Tbs chickpea brine (liquid from the chickpea can)
- 1 handful fresh cilantro or parsley
- 1 clove garlic
- 1 teaspoon turmeric + 1 teaspoon olive oil
- salt, pepper to taste
Instructions
- Preheat oven to 390°F/200°C.
- Combine all ingredients in a blender or food processor. Blend until smooth. Form balls with your hands.
- Bake for 20 minutes.

These are so different Florian! I love the bright color! I always make mine with the classic flavors and use lots of cumin and tahini in mine, so I love this twist of turmeric. I love that you put them on sandwich bread too, I've only ever eaten them in a pita! Great recipe and such bright photos Florian!
